Eggplant rolls make delicious appetizers!

You only need three ingredients to make this tasty appetizer: eggplant, cheese, and ham.

Start by cutting an eggplant vertically, so as to obtain slices. Then, add salt and next pat dry the eggplant slices with paper towels.

Now flour the eggplant slices and fry them in olive oil. Let drain any excess oil, then roll the fried eggplant together with a slice of ham and cheese.

Arrange the eggplant, cheese, and ham rolls on a baking sheet, sprinkle with breadcrumbs and a few small pieces of cheese.

Now bake at 180°C (350°F) for 15 minutes and. . . Enjoy!
