This is a recipe for Eggplant Cordon Bleu, a revised and easier version of the traditional dish. You just cut an eggplant into 1 cm thick slices, dip each slice in beaten egg and breadcrumbs and then place them on an oiled baking sheet.
Next, put the slices of cooked ham and mozzarella on the slices of eggplant and close the "sandwiches" with a final slice of eggplant. Bake for 15 minutes at 180°C, and enjoy!
