1 kg of zucchini
2 onions
1 tablespoon of olive oil
1 clove of garlic
salt
pepper
1 teaspoon thyme
1 teaspoon rosemary
1 teaspoon oregano
nutmeg
60 gr of parmesan
2 eggs
10 cl of milk
Preheat the oven to 180 ° and in the meantime cut the courgettes into slices around 1 centimeter thick. Put them on a baking tray and add salt, then let them dry. Then, chop the onion and add to a pan with the olive oil and fry the onion for about 5 minutes. In the meantime, take a bowl and beat the eggs as if you were preparing an omelette. Then add the thyme, rosemary and oregano, do the same for the garlic after having crushed it; only then add 10 cl of milk and 60 gr of Parmesan to the mixture.
Then salt and pepper the mixture to taste and mix it well to make it more homogeneous. Take a baking dish and put the onion in first, then the cut zucchini; then pour the egg mixture over the zucchini and onion layers. Garnish with nutmeg and grated Parmesan to give more flavor; cook the gratin in the oven for about 25 minutes at 180 °.
Once the surface is golden brown, take it out of the oven and serve hot. Enjoy your meal!
